ingredients
- 1 cup sugar
- 1⁄2 cup shortening (I use margarine)
- 3 ripe bananas
- 1 teaspoon vanilla
- 1 teaspoon baking soda (I use baking powder)
- 2 eggs, beaten
- 2 cups flour
- 1⁄2 cup nuts (I use pecans chopped very fine)
directions
- Mix all ingredients together. I use a food processor.
- Place in a loaf pan.
- Bake at 350 for 1 hour.

This was really easy to make! I creamed the sugar and shortening first (habit, I'm afraid), then read the directions, and added everything else. I popped it in the oven, and it made a lovely loaf with a very simple banana flavour - perfect!! I hope my pics turned out, because DH had taken the slices I cut seconds after I walked away with the camera! It's that good! I did use the baking powder. I think I'd like to try it again with the soda and see what the difference might be. :) This is a very simple, perfect banana bread that I will make again, and again. Thanks, Cinisajoy! I made this recipe exactly as written with no deviations. I baked them in mini-muffin size pans and sent a double batch to work with my husband to share with his coworkers. He stated they were gone before lunch rolled around and people were inquiring if there were any left throughout the day. My husband greatly enjoyed them, as well. I taste tested one muffin and I thought it was very moist, had a nice rise; great banana flavor and thankfully, did not have that really salty aftertaste from the baking powder that many recipes of this type have. I will making these again.
