- 4 tablespoons unsalted butter
- 1⁄4 cup coconut sugar
- 4 1⁄2 teaspoons stevia
- 1 teaspoon vanilla extract
- 1⁄2 egg
- 74 g gluten free all-purpose flour
- 1⁄2 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 1⁄8 teaspoon salt
- 1⁄8 cinnamon
- 48 g gluten free rolled oats
- 28 g dark chocolate chips
directions
- Preheat the oven to 350 degree Fahrenheit and line a baking sheet with parchment paper.
- Melt the butter, then mix in the coconut sugar, stevia, and vanilla extract.
- Whisk one egg and pour half into the sugar mixture.
- In a separate bowl, mix together the GF flour, baking soda, baking powder, salt, and cinnamon.
- Put the dry mixture into the wet mixture, then finally stir in the oats and chocolate.
- Dollop the cookie batter onto the baking sheet (10 cookies). Also the cookies will make a wet batter, so leave room in between each dollop.
- Bake for 12 minutes then allow to cool.
