Ingredients: 1/2 cup chili powder; 5 teaspoons ground cumin; 4 teaspoons onion flakes; 2 teaspoons garlic salt; 1 1/2 teaspoons paprika; 1 teaspoon red pepper, up to 2 teaspoons; 1 tablespoon olive oil; 2 lbs ground venison; 2 (15 ounce) cans kidney beans, drained; 1 (10 ounce) can rotel; 1 (8 ounce) can tomato sauce; 2 tablespoons masa corn flour, mixed in 1/4 cup warm water (optional)

"I have to always have some of this chili in the freezer, so I tend to cook a large batch in a 16-qt. stockpot, but I base it on my adaptation of Wick Fowler's 2-alarm chili."

Chili Mix
¹⁄₂ cup chili powder
5 teaspoons ground cumin
4 teaspoons onion flakes
2 teaspoons garlic salt
1 ¹⁄₂ teaspoons paprika
1 teaspoon red pepper, up to 2 teaspoons
Other Ingredients
1 tablespoon olive oil
2 lbs ground venison
2 (15 ounce) cans kidney beans, drained
1 (10 ounce) can rotel
1 (8 ounce) can tomato sauce
2 tablespoons masa corn flour, mixed in 1/4 cup warm water (optional)

directions

Brown venison in olive oil. Add chili seasoning mix and other ingredients except masa flour.
Simmer for 40 minutes; stir occasionally.
Add masa flour-water mixture, if using.
Simmer for 15-20 minutes.
