  • Preheat oven to 325 degrees. In saucepan melt 6 tablespoons butter over moderately low heat, add flour and whisk until mixture is smooth paste. Add half-and-half, salt and pepper, continue whisking until sauce thickens. Remove from heat. Spoon 1/2 cup of sauce into greased 1 1/2 quart casserole. Sprinkle a few cracker crumbs over sauce. Arrange successive layers of eggs, cheese and pimentos, repeating until all ingredients have been layered, ending with cracker crumbs on top. Dot with pieces of remaining butter and bake until bubbling and golden, about 30 minutes. Serve hot. Yield: 6 servings.
