- 1 lb salmon (Sockeye preferred)
- 1 cup sliced leek
- 2 tablespoons fresh grated horseradish
- 1⁄2 cup chicken broth
- 4 tablespoons butter
directions
- Preheat oven to 350F.
- Place two teaspoons of butter and a forth of the horseradish on the bottom of a casserole dish.
- Place the salmon on too and cover with remaining Horseradish and leaks.
- Place covered in oven for 10 minutes. After 10 minutes remove the lid and add the chicken broth being careful to only pour the broth around the edges. Lift the edges of the salmon to allow coverage. Leave uncovered and turn oven up to 425F for 5 minutes or until desired doneness.
