- 2 cups pork sausage
- 1 cup rice
- 1⁄2 cup butter
- 1 cup of chopped raw onion
- 1 tablespoon salt
- 1 tablespoon pepper
- 2 (14 ounce) cans black-eyed peas
- 1 cup water
directions
- Sauté sausage to brown, then drain.
- In a large pot combine sausage, rice, butter, onion, salt, pepper and peas. Add the water; cook until rice is tender.

I was looking for easy and found this. It sounded delicious and I have to say it is probably the best Hoppin' John I've ever eaten. It is so good --- I don't want to run out!! I followed the recipe exactly as written and will definitely be making this often. I used Jimmy Dean's pre-cooked, pre-crumbled sausage in a bag. Thank you for providing this recipe!
