Honey Chipotle Bacon

• 1 lb thick-cut bacon
• 1⁄3 cup honey
• 1 chipotle pepper

directions

1. Preheat oven to 400°F.
2. Being careful not to overlap, lay bacon slices on a rimmed baking sheet. Bake for 15 minutes, flip slices and continue to bake for another 5 minutes or until cooked fully on both sides. Transfer bacon to a towel-lined plate or cooling rack.
3. In a food processor, puree honey and chipotle until smooth. Place bacon on a clean baking sheet lined with parchment paper. Brush chipotle glaze on one side of each slice of bacon and bake for an additional 2 to 5 minutes until glaze begins to bubble but not burn.
4. Transfer bacon to cooling rack and allow to cool until crisp, about 3 minutes. Serve.
