- 3 egg yolks
- 1 tablespoon water
- 1 tablespoon lemon juice
- 1⁄2 cup unsalted butter, melted
- salt (to taste)
- cayenne pepper (to taste)
directions
- In a small saucepan, combine the egg yolks, water, and lemon juice.
- Place the saucepan over low heat and whisk the mixture until it becomes thick and frothy. This should take about 2-3 minutes.
- Remove the saucepan from the heat and slowly drizzle in the melted butter, whisking constantly. It's important to add the butter slowly so that the mixture doesn't break.
- Once all the butter has been incorporated, season the hollandaise sauce with salt and cayenne pepper to taste. Whisk to combine.
- If the hollandaise sauce is too thick, you can thin it out by adding a teaspoon or two of warm water and whisking until it reaches the desired consistency.
- Serve the hollandaise sauce immediately, as it doesn't keep well and can separate if it sits too long.
