Healthy Cilantro Lime Vinaigrette Dressing

"This is a recipe from "Phoenix Home and Gardens Magazine". I like to make it once in a while for a green salad - it's delicious, healthy and so simple to make. Zest the lime a little if you want extra flavor. Adjust the cilantro to your tastes."

  • Place all EXCEPT cilantro in a blender and blend until smooth.
  • Stir in the chopped cilantro and serve over a fresh salad.

  1. This is a very good dressing. I thought it was a bit heavy on the vinegar, though, so I cut it in half since the lime juice adds enough acidity. Like another reviewer, I mixed the cilantro in with all the other ingredients and might add a little bit more next time for more flavor. I put it on a salad with shrimp, red onions, avocado, and goat cheese and happily ate it for lunch most of the week. I'm making another batch of this dressing tonight. This is definitely a keeper and a great go-to dressing.
     
  2. wow, what a flavor burst in your mouth! This Dressing is wonderful, Im so glad i tried it, and will use it again and again, It will make the Summer salads wonderful and refreshing, Thank you so much for posting this recipe, and I wouldnt change a thing
     
  3. This was really fast and easy (and delicious) with the use of a food processor. I decided to add the cilantro with the other ingredients when I pureed it, however.
