ingredients
- 1 -2 cloves peeled garlic
- 1 tablespoon diced shallot
- 1 lime, juice of
- 1⁄2 cup rice wine vinegar
- 1 -2 teaspoon honey
- 1⁄3 cup grapeseed oil
- 1 teaspoon kosher salt
- black pepper
- 3 tablespoons chopped fresh cilantro
directions
- Place all EXCEPT cilantro in a blender and blend until smooth.
- Stir in the chopped cilantro and serve over a fresh salad.

This is a very good dressing. I thought it was a bit heavy on the vinegar, though, so I cut it in half since the lime juice adds enough acidity. Like another reviewer, I mixed the cilantro in with all the other ingredients and might add a little bit more next time for more flavor. I put it on a salad with shrimp, red onions, avocado, and goat cheese and happily ate it for lunch most of the week. I'm making another batch of this dressing tonight. This is definitely a keeper and a great go-to dressing.
