Grilled Chicken With Cilantro Marinade

  • Mix together the marinade ingredients in a deep bowl. Add the chicken breasts and turn to coat completely. Cover the bowl and refrigerate.
  • Marinade for about 1 hour. You can leave the chicken in the marinade longer, but because the mixture is very acidic, the chicken will begin to appear poached.
  • Preheat your grill. Cook the chicken over medium hot coals for about 3-5 mins per side.
  • Serve and enjoy.

    I agree with more garlic and cilantro. Overall it was great and only 1 hour to marinade, made it fast and easy.

    What a wonderful, easy recipe! I used more cilantro and garlic than the recipe called for, and I used 3T of the lime juice. The chicken was so tender, moist and flavorful! And that's really saying something for boneless skinless chicken breasts! Thanks so much for posting. This was the first thing we grilled this Spring, but it most definitely won't be the last time we grill this chicken!

    Wow! What a wonderful surprise! Easy to make, and this is truly delicious. Super moist and super flavorful. My chicken breasts were huge (not out of a frozen bag, more like a pound each, so I had to increase the cooking time to adjust for the size. A definite make again recipe! I work full-time as a School Psychologist in Michigan. Besides the kids, one of the best aspects of the job is summer vacation, when I can concentrate on doing more of the things that I like to do---like look up recipes and play games on Recipezaar!!! I married my wonderful and handsome husband, Sean, in August 2007. He is becoming a wonderful gardender and tends to both our veggie and herb gardens. One of my favorite places is Italy, and Sean and I had a great time on our honeymoon eating, drinking, and sightseeing in the Cinque Terre and in Tuscany. This July 2009, we expanded our horizons to Eastern Europe and visited the Czech Republic, Slovenia, and Croatia. Two of my favorite dishes on the trip were Croatian: fish brodet and Hvarska gregada. I am looking forward to trying my hand at making them at home as I see that someone on Zaar, who is Croatian, posted recipes for both!
