Grilled Chicken With Balsamic Peach Marinade

ingredients
- 4 chicken breasts
- 1 cup fresh peach, mashed
- 1⁄2 cup balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon ground black pepper
- 1⁄2 teaspoon garlic, crushed
- 1 tablespoon fresh thyme
- 1⁄2 cup olive oil
directions
- Combine vinegar, mustard, honey, salt, pepper, garlic, and thyme. Whisk until well blended, then add olive oil and mix.
- Just before you are ready to marinate chicken, stir in peaches.
- Pour over chicken breasts. Allow to marinate for at least 2 hours and grill.

This was REALLY good! The only reason I'm not giving it 5 stars i that I was looking forward to some peach flavor, but I found the balsamic vinegar overwhelmed the other ingredients. Next time I may cut it down to 1/4C of balsamic. The changes I made this time were to cut the olive oil down to 4T rather than 1/2C, and to use 1/2t dried thyme. I marinated for 7 hours, grilled the chicken, and boiled the sauce to serve over the breasts. I'm thinking leftovers tomorrow will be YUMMY over a bed of spinach.... Thanks for sharing!

This was a really great recipe. I subbed agave nectar for the honey and nonfat plain yogurt for the olive oil for a healthier version. The marinade was so tasty I reserved a little for sauce as another reviewer had suggested and simmered it a few minutes before pouring over the grilled chicken. I served this with recipe #197460, balsamic roasted vegetables. Very yummy!

After a spending my childhood subsisting on a handful of favorite foods, I became a more adventurous eater in my teens and now enjoy trying new foods. It took a little longer for me to get up my nerve to expand my cooking repertoire beyond the basics, but I'm enjoying branching out, especially now with inspiration from the Recipezaar chefs. One of my goals is to reduce the amount of processed food my family eats, so I'm making an effort to cook more from scratch and use local, seasonal fruits and vegetables.
