Garlicky Beet Delight

- 6 medium beets
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 garlic cloves, crushed (I use more)
- salt
directions
- Wash the beets; boil until tender, about 45 minutes (or 20 minutes in a pressure cooker).
- Remove the skins by running cold water over the boiled beets; slip off the beet skins.
- Slice the beets and toss with the olive oil, vinegar, garlic and salt.
- That will keep the vampires away for at least a night ;).

<p>I just love to cook and bake for my family. I especially take pride in my Christmas baking. That time of year in my home is always a big deal. Christmastime isn't the same without all the wonderful smells, decorating and warm, fuzzy feelings the season brings with it. <br /> <br />I must say, I do enjoy searching for old-fashioned type recipes or comfort foods, rather than the artsy type recipes. I'm a nostalgic one indeed! :)</p>
