- 8 potatoes, peeled washed,and quartered
- 1 cup sour cream
- 3 cloves garlic
- parsley, chopped
directions
- Boil potatoes and garlic together until tender.
- Drain potatoes and garlic.
- In a mixing bowl, blend the potatoes, garlic, and sour cream until smooth.
- Sprinkle with parsely.

Yum! These were great! I made them with red potatoes and 4 cloves of garlic for extra flavor! I also put the sour cream in the microwave on 50% power for about 20 seconds to heat it up a bit so that it wouldn't cool down the potatoes too much. We loved these and will definitely be making them again!

We enjoyed this with our pulled pork sandwiches last night. I thought the sour cream was a bit over powering but that is just my personal taste. The next time I would cut down on the sour cream and add a little more butter. The cooking method was super easy and the potatoes were nice and fluffy:)Thanks for posting
