Fried Okra Salad

- 1 1⁄2 cups self rising flour
- 1 teaspoon salt
- 1 lb fried okra
- 1 1⁄2 cups buttermilk
- oil
- 1 head bibb lettuce
- 1 cup chopped tomato
- 1 medium sweet onion, sliced
- 1 medium bell pepper, chopped
- lemon, dressing
- 1 slice crumbled bacon
directions
- Combine corn meal and salt. Dip okra in buttermilk and dredge in cornmeal. Heat 2 inches of oil in a Dutch oven heated to 375 degrees. Fry okra in batches until golden brown. Drain on paper towels. Arrange lettuce leaves, tomato slices, onion,and bell pepper on a plater. Add lemon dressing, stirring to coat. Top with bacon and okra.
