Fran's Fresh Apple Cake

"My sister got this recipe in a recipe exchange in 1960 when she was in first grade. My mom, Fran, tweaked it to make it her own. It is a little time consuming to make, but it is worth the trouble. It was Mom's signature cake. Making it always brings back memories of Mom and family celebrations."

  • Sift the flour, spices, salt and soda together to make sure they are well incorporated.
  • In a the bowl of a stand mixer, blend the oil, sugar, eggs and vanilla.
  • Add the dry mixture cup by cup to the wet ingredients, beating after each addition. The batter will be very heavy.
  • Add the apples and nuts. Bake in a greased bundt pan at 350F for between 60 and 75 minutes. (Clean toothpick equals done.).
  • Mom never glazed this cake, but it would be fine with a light dusting of powdered sugar or a simple glaze. A slice is great with a little butter and toasted for breakfast.
