Fran's Fresh Apple Cake

ingredients
- 3 cups tart apples, like Granny Smith, chopped fine
- 3 cups flour
- 2 cups brown sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 1⁄2 teaspoons baking soda
- 1 cup vegetable oil
- 1⁄4 cup applesauce
- 2 well-beaten eggs
- 2 teaspoons vanilla
- 1 cup chopped pecans
directions
- Sift the flour, spices, salt and soda together to make sure they are well incorporated.
- In a the bowl of a stand mixer, blend the oil, sugar, eggs and vanilla.
- Add the dry mixture cup by cup to the wet ingredients, beating after each addition. The batter will be very heavy.
- Add the apples and nuts. Bake in a greased bundt pan at 350F for between 60 and 75 minutes. (Clean toothpick equals done.).
- Mom never glazed this cake, but it would be fine with a light dusting of powdered sugar or a simple glaze. A slice is great with a little butter and toasted for breakfast.
