ingredients
- 1 1⁄4 cups flour (I use spelt)
- 1⁄2 cup whole wheat flour (I use whole spelt)
- 2 tablespoons ground flax seeds
- 1 3⁄4 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 1 cup buttermilk (low-fat)
- 1⁄2 cup applesauce (unsweetened)
- 1⁄4 cup water (I used sparkling water for even fluffier pancakes)
- 1 teaspoon vanilla extract

- In a big bowl combine flours, flax seeds, baking powder, baking soda and cinnamon.
- In a second bowl combine buttermilk, applesauce, water and vanilla extract.
- Using a wire whisk combine dry and wet ingredients making sure to incorporate a lot of air into the batter.
- Allow dough to rest for 30 minutes.
- Heat a non-stick frying pan or griddle and cook pancakes one at a time like you normally would.
- Turn pancake when bubbles form on top. Each side should be golden brown.
- Enjoy with your favourite toppings.
