Easy One Pot K-D Taco Supper

- 1 lb ground beef
- 1⁄2 cup onion, chopped
- 1⁄2 cup green pepper, chopped
- 2 1⁄2 cups water, hot
- 1 (1 1/4 ounce) envelope taco seasoning
- 1 (6 1/2 ounce) box of macaroni and cheese (Kraft Dinner)
- 1 cup tomatoes, diced
- 1⁄2 cup sour cream (optional)
- green onion, sliced for garnish (optional)
- lettuce, shredded for garnish (optional)
directions
- Scramble fry ground beef, onion, and green pepper in a large non-stick frying pan with fairly high sides for about 5 minutes (until onion is soft and beef is no longer pink) and drain.
- Stir in hot water and taco seasoning mix.
- Bring to a boil and stir in the macaroni ONLY from the KD package. Cover, simmer, stirring occasionally until macaroni is tender.
- Add the cheese packet and the tomato and stir together well.
- Serve immediately with sour cream, green onion, and lettuce!

Easy to throw together with minimal mess! Fed my husband and myself, and our 9, 7 and 2 year old with plenty leftover for lunch the next day. Our two year old even went for thirds, so this is definitely a keeper! All I had for the mac & cheese was a box of something generic. Next time I'll make sure to have actual Kraft on hand, because I really think it would have made it that much tastier!

This is so simple and very satisfying! I am new at mexican cooking, and was very pleased to find the taco seasoning I needed, and I used a local brand of boxed Mac 'n ' Cheese. Taco seasoning is much more spicy than I anticipated!!! But very nice!!! I added a red bellpepper as well, bit more colour, and also popped in about 100gr of sliced mushrooms that needed to be used. What a super comfort dinner, easily and quickly prepared, we really liked this, thank you Cadillacgirl! This was made for ZWT 8

<p>I'm a good ol' prairie girl from Canada with one side of the family being Ukrainian/Slovakian and the other side is German/Russian. In other words, when we cook we take carbs, cover them in more carbs, fry'em and serve it smothered in onions and cream. <br />No pro chefs in my family, just grandmas and aunts and cousins and a mom that had me pinching perogies and stuffing strudel before I could form a complete sentence. <br />The most dreaded / laughed at phrase I say is, So last night, I invented this thing for supper... - I would probably publish more recipes if I actually remembered everything I put in or had an idea of how much I added!!</p>
