- 1⁄2 cup basmati rice
- 1 (6 ounce) can tomato juice
- 1⁄4 cup water
- 1 (15 ounce) can diced tomatoes, with juice
- 1⁄2 teaspoon salt
- 1 (15 ounce) can sliced mushrooms, drained
- 1 (15 ounce) can cut green beans, drained
- 1 teaspoon cinnamon
- 1⁄4 teaspoon saffron
- 1⁄2 cup diced cooked chicken breast
directions
- Combine all ingredients in a small (1-2 QT)saucepan. Place on High heat until it comes to a boil. Reduce heat to medium low and cook for 45 min-1 hour.
