Easter Bunny S'mores in a Jar

- 7 ounces graham crackers
- 8 marshmallow peeps
- 1 1⁄2 cups easter colored M&M's
- 1⁄3 cup brown sugar
directions
- Crush your graham crackers to crumbs.
- Layer 2/3 of crumbs on the bottom of a 1 quart jar.
- Place your bunnies standing up and facing out on inside of jar.
- Press them against the glass but don't squash them.
- Carefully spoon the remaining crumbs into the center of jar to support the bunnies, pressing down to keep snug.
- On the top of this, pour the Easter M&M's.
- Spoon the brown sugar over the top of the M&M's, gently pressing with a spoon.

Attach a gift card that says:
- EASTER BUNNY S'MORES.
- Empty the jar contents into a bowl. Snip the bunnies into bits with kitchen sheers or cut with a knife. Return the bits to mixture and mix well.
- Melt 1/2 cup butter and add 1 teaspoon of vanilla. Pour this over the dry ingredients and mix well.
- Pat into a greased 9x9-inch pan.
- Bake at 350°F for 15 minutes.
- Cool and cut into bars.
- ***Optional--You can leave the bunnies whole and lay them on top of mixture to bake.

Yes, they look beautiful, but have you tried baking them? I did, and I wound up with a total pile of muck swimming in melted butter. To save them, I drained the butter off, spread the much in a 9x13 glass pan, added fresh marshmallows on top and baked it again. They were at lease edible after that. I'm only sorry I gave these as gifts before trying them! I'd say, cut the butter in half and add more graham crumbs, using the bagged crumbs, not crushed crackers.

I made these for Christmas using Snowmen instead of the Bunnies. I had a few problems with getting all the snowmn around in the jar. Not enough room. I ended up putting two on top under the lid. But then I used my leftover peeps to make a batch to taste. They were very plain and fell apart on us. So I ended up scrapping this idea and making brownies in a jar!!

I made 10 or 12 of these jars last Easter for brunch party favors and learned some tricks along the way. First of all, buy wide mouth jars, as they’ll give your fingers more room for placing the Bunny Peeps. A second set of hands is also helpful. We first tried cutting the bunnies apart in an effort to variegate the available colors …Wrong! Leave 3 or 4 attached to each other as they come in the carton, or they’ll be falling over faster than you can stand them back up. You can use 2 colors if you like. We decided to put the bunnies at the bottom of each jar and crushed the graham crackers (one sleeve) combined with the brown sugar in a food processor. However, the crumbs were seeping in between the bunnies and didn’t look attractive. Our solution was to put the crumbs & sugar mixture in a thin plastic bag, tamped it down to fill the center of the bunny circle using the rubber bulb end of a turkey baster, and tying the bag at the top. The bunnies will now stand up without the crumb mixture showing & looking messy. Next we added the Easter colored M & M’s to fill the jar. I found some Easter print fabric at Walmart, cut it with a pinking shears to “dress” the lid and tied it with a thin ribbon bow. Last of all, I attached a small fold over card using computer graphics, including the recipe for baking and this message: "You’re Some Bunny Nice to Know! We’ll stick together as Friends Forever So here’s a Special Easter S’mores Treat" …from Sunshine & Romyo (our cat) I’m telling you, these are simply too cute and enjoyed by my adult guests. I didn’t end up baking my test jars, but stored them in a dark pantry for decoration again this year. Happy Easter, Happy Spring everyone!
