Chicken Parmesan Foil Packets

"From Reynolds Wrap recipe attached to a packet of chicken. I just made iewe's "Recipe #305416" and it worked so well that when I saw this recipe I just had to post it to keep it for next weeks dinner plans. I hope you enjoy it too."

  • Preheat grill to a medium high heat.
  • Tear foil into 12x18-inch sheets and spray each with non-stick spray.
  • Center one chicken breast onto each sheet.
  • Spoon 1/4 c pasta sauce over each chicken breast.
  • Top each with some zucchini slices or broccoli florets.
  • Sprinkle each with some parmesan cheese.
  • Fold up sides and double fold the top and ends to seal each packet, leaving room for circulation inside.
  • Grill 15-20 minutes in a covered grill until chicken reaches a temperature of 170 degrees at the thickest part.
  • Cut small slits in top of foil to release steam.
  • Either serve in foil packets or remove from pack and place chicken on some pasta noodles. Sprinkle with mozzarella cheese before serving.

  1. Do you have to use zucchini? Does it require any vegetable as my husband hates veggies of any kind?

  1. These are fantastic! I also baked them in the oven - 350 degrees F for 30 minutes was perfect. I also made sure to season the chicken with salt and pepper both sides - about 1/2 teaspoon each total - before spooning on the sauce and zucchini . I served the chicken over spaghetti tossed with more marinara sauce. A simple and easy summer meal.

I tried adding mushrooms as Starrynews suggested (I personally believe that the cooking trinity is garlic, onion, and mushrooms!) and loved it.   4. The chicken was not dry, but that's the best thing to be said about it. Wow. What a flavorless dish! I did not tweak it because I like to follow the original recipe first. I will grill the chicken in foil (and parchment paper) again, but I will add some whole garlic cloves, whole shallots, some fresh thyme, rosemary and sage. Very disappointing recipe.
     
  5. This was a great meal that got good reviews across the boards from my family and friends that tried it. We added both broccoli and zucchini to the packets and seasoned the chicken with some Seasoned Salt before throwing them on the grill. I had to cook them a little longer than written (about 7-10 more minutes) but I used larger chicken breasts so I expected it. I completely forgot to add the mozzarella when I served it, but everyone was so busy eating that I don't think it mattered! I will definitely be making these again and adding some of the other veggies that were suggested by other reviewers. Thanks for posting!

Tweaks

  1. Skip the spray, Use a same size sheet of parchment paper. It will be nonstick and set a buffer layer inside the foil to prevent burn.
     
  2. I tried this recipe today and I must say, my Family LOVED it! I tweaked it just a bit though. For the seven chicken breasts cooked, I used a shot glass of BRAGG'S LIQUID AMINOS, and poured it over each breast in a large bowl, and massaged it in good, I then sprinkled a little GARLIC SALT with PARSLEY FLAKES onto each piece of meat, followed by about a TABLESPOON and HALF of ITALIAN SEASONING FLAKES, and then I placed the 1/4 cup of sauce followed by zucchini and parmesan cheese. OMG! I kept getting compliment after compliment! I can't wait to try this with a TERIYAKI SAUCE! THANK YOU SOO MUCH, FOR THIS RECIPE! SIMPLE, YET DELICIOUS!!!

  4. Absolutely perfectly cooked, moist chicken from the grill. . .and no mess! Loved the zucchini on top. I used Italian 6 cheese blend in place of the parm and mozzarella. Will make this again! Made for Week 2 of the Football Pool, as HokiesLady was the big winner for the week!
