Cheesy Broccoli Delight

"I threw this together tonight to liven up our veggie side dish, and it turned out great! The measurements are approximate, since I just kind of threw it together without measuring, so feel free to experiment. I like it nice and cheesy, but please also feel free to adjust the cheese factor to your preference. This offers a nice twist on plain-ol broccoli for dinner! :-)"

ingredients

  • 1 (14 ounce) bag frozen broccoli florets (cooked, in microwave, until tender)
  • 2 12 cups shredded cheddar cheese (or more)
  • 14 cup sliced almonds
  • 1 - 1 12 teaspoon bacon bits
  • 1 garlic clove, minced
  • salt and pepper, to taste
  • spices, your choice, to taste (I used Herbes De Provence, my favorite)

directions

  • After cooking broccoli florets in microwave, drain water from dish.
  • Add all other ingredients, and toss well.
  • Cook for approximately 1 1/2 to 2 minutes in microwave, until cheese has melted.
  • Stir well before serving.

  1. This was good and easy to make. I used organic broccoli and only about 2 cups of cheese. I didn't add the almonds but added more bacon bits then called for. Just added salt and pepper for seasoning. Nice, easy side dish that my whole family enjoyed.

2007 I thought that I would edit my home page...its been over two years, so I its time to update! I have lived in beautiful New Mexico for the last few years (Albuquerque), after 20 years of living on the West Coast (San Francisco and Seattle). I am a total water baby, who lives in the desert, so I love traveling to tropical locations, where I especially love to snorkle and boggie board! I am very happily married to my best friend, soulmate, partner, and greatest cheerleader and supporter, and we have three grown children, and four grandchildren (so far :-))I am a total foodie (I "live to eat" instead of "eat to live.") :-) I love everything about food...cooking; the delicious scents of a yummy dish, as it cooks; the beautiful presentation of wonderful food; dining out; dining in; the taste of great food; sitting around the table, with friends and family, eating, talking and laughing; nurturing those I love by cooking for them...all of the senusal pleasures that food brings!
