  • Preheat the oven to 325°F.
  • In a large mixing bowl, using a whisk beater, combine the sugar, salt, oil, and butter for one minute.
  • Then add the eggs, and beat until well combined.
  • Mix in the heavy cream and whisk for another minute.
  • Switch the beater to a dough hook then add the flour and baking powder to the batter.  Beat for 2 minutes, or until the dough is combined and a firm consistency.
  • Cover and let the dough rest for 5 minutes.
  • Line baking sheets with parchment paper. Pinch off pieces of dough and roll it into a ball, then roll the ball in sugar. .
  • Place the balls on the baking sheets around 2” apart, then press the ball using a glass. At this point, you can press any shape onto the cookie using small cookie cutters, etc.
  • Bake cookies for approximately 20 minutes, or until lightly coloured.
