Big Batch Portuguese Butter Cookies

- 10 cups all-purpose flour
- 1 1⁄2 tablespoons baking powder
- 5 large eggs
- 2 cups sugar
- 2 1⁄4 cups butter, cubed
- 5 tablespoons vegetable oil
- 1 teaspoon salt
- 1 cup heavy cream (whipping)
- sugar, for rolling
directions
- Preheat the oven to 325°F.
- In a large mixing bowl, using a whisk beater, combine the sugar, salt, oil, and butter for one minute.
- Then add the eggs, and beat until well combined.
- Mix in the heavy cream and whisk for another minute.
- Switch the beater to a dough hook then add the flour and baking powder to the batter. Beat for 2 minutes, or until the dough is combined and a firm consistency.
- Cover and let the dough rest for 5 minutes.
- Line baking sheets with parchment paper. Pinch off pieces of dough and roll it into a ball, then roll the ball in sugar. .
- Place the balls on the baking sheets around 2” apart, then press the ball using a glass. At this point, you can press any shape onto the cookie using small cookie cutters, etc.
- Bake cookies for approximately 20 minutes, or until lightly coloured.
