Best Pineapple Cake

ingredients
- 2 cups flour
- 2 eggs
- 1 teaspoon vanilla
- 2 cups sugar (can cut to 1 1/2 Cups)
- 2 teaspoons baking soda
- 1⁄2 - 3⁄4 cup chopped walnuts
- 1 (20 ounce) can crushed pineapple (do not drain)
directions
- Mix all the ingredients together in a large bowl. Either us a hand mixer or beat by hand until well blended. Bake in a greased and floured 9x13 pan at 350 degrees for 40-45 minutes.

Icing:
- a cream cheese frosting is good but this cake needs only powdered sugar.

Wowie! This cake literally takes 2 minutes to put together... I had time to prepare the cake AND do the dishes before the oven was preheated!!! My can of pineapple was 19oz, but it worked out fine. I significantly reduced the sugar: used only 1/2 cup of white sugar and 1/4 cup (scant) of brown sugar - you do taste the eggs quite a bit though. With the absence of fat and the reduced sugar, this cake is quite healthy. I omitted the walnuts because I was all out... Will try with whole wheat flour next time. I only had to bake it 30 minutes, at which point it was perfectly golden all around. I'm stacking up on crushed pineapple for emergency comfort-food cravings! Thanks Chef :)

This is called Best Cake for a reason, as we found it to be quite good. It doesn't get much easier than mixing all of the ingredients in one bowl. I iced with a cream cheese frosting topped with walnuts. The cake didn't make it long before it was devoured. UPDATE 7/16/09 - made this again with a few changes - used whole white wheat flour, reduced sugar to 1.5 cups, and dusted with powdered sugar instead of the cream cheese icing. The kids didn't like it without the cream cheese icing, but it hit the spot for me as a lower calorie dessert option. And, got 20 pieces out of a 10X13 glass baking dish. Baked 40 minutes at 350 and came out perfect.
