- 1⁄2 cup canola oil
- 1⁄2 cup white sugar
- 2 eggs
- 3 medium bananas, very ripe
- 1 1⁄2 cups unbleached flour
- 1⁄2 cup old-fashioned oatmeal
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1 teaspoon apple pie spice (or plain cinnamon, or any combination of spices that you like.)
- 2 tablespoons flax seed meal (optional, adds flavor, fiber and Omega oils)
- 1⁄2 cup walnuts, chopped (or pecans or sunflower seeds)
directions
- Preheat the oven to 400°F.
- Grease well one 12-cup muffin tin.
- Blend vegetable oil, sugar and eggs. Add dry ingredients and mix until just blended. Fold in mashed bananas, then nuts.
- Bake for 20-25 minutes or until a knife comes out clean.
