directions

  • Preheat oven to 350 degrees, grease a pan ( 8 x 8 or close to).
  • Cream the butter and sugar together (electric mixer helps a lot but not necessary) until light and fluffy. Gradually beat the eggs into the mixture.
  • Sift the flour, salt, and baking powder into the mixture, and fold to combine. Then, stir in the banana and buttermilk (or plain yogurt).
  • Spoon the mixture into the pan and smooth with a palette knife. Bake in the oven for 35 minutes, or until risen.
  • (If you chose to add coconut) while the cake is baking, dry-fry (no oil) the coconut over low heat until golden brown, stirring continuously. Put coconut on a plate once it’s cooked to keep it from burning.
  • Beat the cream cheese and icing sugar together until completely combined. The mixture should be smooth and soft.
  • After cake is completely cool, cover with cream cheese frosting and sprinkle coconut across it (optional). Cut into squares (I do 3x3 but it depends on Pan size).
