- 1⁄2 cup unsalted butter (softened)
- 1 3⁄4 cups self-rising flour
- 1 lb ripe banana (peeled and mashed)
- 1⁄2 cup soft brown sugar
- 1 teaspoon baking powder
- 2 eggs (beaten)
- 1 pinch salt
- 2 tablespoons buttermilk or 2 tablespoons plain yogurt
- 3⁄4 cup cream cheese (for frosting)
- 1⁄2 cup icing sugar (for frosting)
- 3⁄4 cup desiccated coconut (optional but tasty)

- Preheat oven to 350 degrees, grease a pan ( 8 x 8 or close to).
- Cream the butter and sugar together (electric mixer helps a lot but not necessary) until light and fluffy. Gradually beat the eggs into the mixture.
- Sift the flour, salt, and baking powder into the mixture, and fold to combine. Then, stir in the banana and buttermilk (or plain yogurt).
- Spoon the mixture into the pan and smooth with a palette knife. Bake in the oven for 35 minutes, or until risen.
- (If you chose to add coconut) while the cake is baking, dry-fry (no oil) the coconut over low heat until golden brown, stirring continuously. Put coconut on a plate once it’s cooked to keep it from burning.
- Beat the cream cheese and icing sugar together until completely combined. The mixture should be smooth and soft.
- After cake is completely cool, cover with cream cheese frosting and sprinkle coconut across it (optional). Cut into squares (I do 3x3 but it depends on Pan size).
