Cereal-Breaded Baked Chicken Tenders

- 1 lb chicken breast, cubed

Bowl 1
- 1⁄4 cup ranch salad dressing
-
Bowl 2
- 1 cup crushed corn flakes cereal
- 1⁄2 cup grated parmesan cheese
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄8 teaspoon garlic powder
directions
- Preheat oven to 400; grease an 11x7 baking pan; set aside.
- Pour Ranch dressing into Bowl 1.
- Combine Bowl 2 ingredients, set aside.
- Toss chicken in Bowl 1, then Bowl 2; fluffing artistically :-) .
- Place chicken cubes in single layer on baking pan.
- Bake for 12-15 minutes.
- Serve with additional Ranch dressing.
- VARIATION: Use Bleu cheese dressing instead (much more yumm-o for the grown-up palate!).
- VARIATION #2: There's always the honey-mustard salad dressing route, too.

I used an egg wash instead of a dressing because we all like different dipping sauces. They were pretty good. I ran out of the crust mixture and instead of grating more chz and everything, I crushed up some more corn flakes and mixed w/ approx. 2tsp. of Cajun seasoning-these were actually better than the original recipe and easier...we were fighting for them. lol

These turn out awesome! I made two different kinds, the cubes/bites did turn out much more moist then the strips. The strips I made with mustard and cracker/pretzel crumbs and the bites were ranch with the remaining cracker/pretzel crumbs but I added some bread crumbs to it. As you can see I pretty much used whatever I had! lol So I'm not sure if the strips were less moist because they have to cook longer OR if its because I used mustard intstead of something that is mayo based. So next time I'll try the strips with a mayo/mustard mix and see if they turn out more moist. But anyway I absolutely love this recipe!! You can do so many different combinations with it! I can't wait to have fun with this recipe. Thank you so much :-)

The only thing I change, due to necessity, is using crushed Ritz crackers instead of corn flakes. I don't think I have ever bought a box corn flakes! But I'm sure they work just as well. I, as another reviewer suggested, use a storage bag to mix the dry ingredients to shake and cover the chicken. So, so good!!!

My family calls me the chicken tender queen because of this recipe. My grandchildren, daughter, brother and sister devour these tenders. The only thing I change, due to necessity, is using crushed Ritz crackers instead of corn flakes. I don't think I have ever bought a box corn flakes! But I'm sure they work just as well. I, as another reviewer suggested, use a storage bag to mix the dry ingredients to shake and cover the chicken. So, so good!!!

We enjoyed these lil nuggets. I didn't realize I was running out of Ranch dressing, so I made 1/3 of them with Ranch, another 1/3 with Blue Cheese dressing, and then another 1/3 with mustard. The mustard ones turned out great too! Instead of crushed corn flakes, I used some leftover Italian flavored breadcrumbs.
