Andalusian Pork

"A Spanish inspired dish by British tv chef James Martin. The cooking time doesn't include the marinating time because it is up to you how long you keep it marinating."

Ready In:




  • Mix the paprika, oregano, thyme garlic and salt with the olive oil to make a thick paste.
  • Spread the paste evenly over the pork, cover and marinate in the fridge, ideally overnight.
  • Cut the meat into slices on the diagonal.
  • Heat a griddle or large heavy frying pan until very hot.
  • Cook the pork for 3-4 minutes on each side until cooked through.
  • Serve at once with the lemon wedges.

  1. I used a mix of sweet paprika and a hot paprika. DELISH. I marinaded the pork for aabout 24 hours. I forgot to serve with the lemon LOL. Very nice marinade. I think next time I will cut the meat into the slices and then marinade. Made just to say THANKS for being a great team mate on ZWT 5


I am originally from the Philadelphia area of the United States but have been living in London, UK since 1996. I now have dual American and British citizenship.
