Amber's Lasagna

"This recipe was made for me by my Grandpa. Its my birthday meal every year and it couldn't be simpler to make. I don't like a lot of meat and I really HATE ricotta cheese so this is the perfect lasagna for me. We make it with jarred marinara sauce and to make it taste less like store bought try adding chopped green peppers and simmer it for about ten minutes prior to assembly. Enjoy!!"

  • 16 lasagna sheets
  • 3 cups Italian cheese blend
  • 1 cup parmesan cheese, freshly grated
  • 8 ounces pepperoni
  • 2 (1 lb) jars marinara sauce

directions

  • Preheat oven to 350.
  • Cook lasagna noodles according to box directions.
  • Spread a spoonful of sauce into the bottom of a 9x13 baking dish.
  • Place 4 sheets of lasagna on sauce, spoon enough sauce to lightly cover sheets, sprinkle 1/2 cup of cheese blend and 1/4 cup parmesan, and roughly 10 slices of pepperoni.
  • Cover with another 4 sheets and repeat layering.
  • Top layer is same as other except omit pepperoni.
  • Bake 30-45 minutes or until cheese is golden brown.
  • *Don't feel like you need to use all the sauce. Extra can be warmed and served on the side for those who like to "drown" their pasta*.
