Directions

  1. In a bowl, combine potatoes, sugar, egg, sour cream and vanilla.
  2. Combine dry ingredients: stir into potato mixture. Heat oil in an electric skillet or deep-fat fryer to 375°F.
  3. Drop dough by teaspoonfuls, 5 to 6 at a time, into hot oil. Fry for 1 minute per side or until golden brown. Drain on paper towels.
  4. Roll in sugar if desired. Serve immediately.

Wonderful drop doughnuts! I had to use a gluten free flour mix since I can't have wheat. These turned out awesome and the gluten eaters couldn't tell any difference!! Yeah.

I had some mashed potatoes left over tonight and did not want to throw them out... this was a simple recipe (I had everything in the house!) that was easy to prepare and I love them! Thank you~
