This was so easy to make! Plus, it is a great recipe to have when you get guests that have to spend the night unexpectedly. I like the fact that I don't have to sautee the onions or cook the bacon before I can make this. The taste of this is delicous! I used imitation bacon bits, and they worked really well. I thought I would miss the real bacon, but I didn't. I did double the recipe to take to a play group. It really went a long way and it filled everyone.

I made this as a single serving for myself in a cast iron pan. I didn't refrigerate overnight, but cooked it right away. I liked it alot and am making it again tomorrow for breakfast. When I made it some of the bread came out like toast and I liked the contrast of toast and scrambled eggs w/cheese in one dish.
