This Lemon Pie is the Best. I have made this every Thanksgivings and my family loves it.

Directions

  1. Combine sugar, cornstarch and salt in a saucepan, gradually add boiling water.
  2. Bring to boil, stirring constantly.
  3. Cook 1 min or until mixture is clear and thickened.
  4. Stir small amount of hot mixture into beaten egg yolks, return to hot mixture.
  5. Cook over medium heat 3 minutes, stirring constantly.
  6. Stir in Lemon juice, 2 Tbs. margarine and lemon rind.
  7. Pour into pastry shell.
  8. Beat egg whites and dash of salt until soft peaks form.
  9. Gradually add marshmallow cream, beating until stiff peaks form.
  10. Spread over filling.
  11. Bake at 350 degrees 12 to 15 minute or until lightly browned.
  12. Cool.

This pie was delicious!! The meringue using the marshmellow creme, makes it "weepless" and tastes better than any I have made. I could possibly double the topping next time, but I really love this recipe as is! Thanks for posting!!
