Yummy and reminds me of Grandma's House at Christmas. Many recipes are similar to this one but this one is the best by far. You can use all butter but the shortening helps to brown and crisp the shortbread shell.

  1. Preheat oven to 400 degrees.
  2. Sift four, 1/2 cup sugar and salt into a large bowl.
  3. Cut in butter until mixture resembles coarse crumbs.
  4. Fold in egg yolks (mixture will be crumbly).
  5. Remove 1/4 of mixture, and set aside.
  6. Press remainder onto bottom and sides an 8" tart shell or pie pan.
  7. In a large bowl, combine apples, brown sugar, 1 tablespoon flour, cinnamon and nutmeg.
  8. Place apples into crust, and sprinkle reserved crumb mixture evenly over top.
  9. Place pie on a baking sheet, and bake in preheated oven for 15 minutes.
  10. Reduce heat to 350° and continue baking 20 minutes, or until top is golden brown and filling is bubbling.

This tasted great and everyone really liked it, but it was not what I expected. The crust just didn't really come together the way I expected. Next time more butter or less flour.

We just made this pie today and it was WONDERFUL! It tasted like an apple pie in the most decadent crust you've ever had. The shortbread is what makes this pie faboulous. It was easy to put together. I did have to sprinkle the crust dough with a little bit of flour when I was pressing it down because it was sticking to my fingers more than the pie pan. I also used my deep dish pie pan. It would not have fit in my 8 inch pie pan. We all loved it! I have been holding onto this recipe since it was posted and I finally had a chance to make it. It was very good and not too sweet. Thank you for a great recipe for apple pie!
