Meatloaf
- 453.59 g ground beef or 453.59 g buffalo
- 157.80 ml gluten-free crisp rice cereal, crushed (I like Perky's Nutty Rice)
- 14.79 ml dried onion
- 1 egg
- 78.78 ml milk
- 2.46 ml gluten-free tamari, soy sauce
- 4.92 ml salt
- 2.46 ml pepper
- 2.46 ml garlic powder
- 2.46 ml gluten-free chili powder

Sauce
- 118.29 ml brown sugar
- 78.78 ml gluten-free ketchup (Annies is a great brand)
- 2.46 ml gluten-free chili powder
- 1.64 ml dry mustard
- 2.46 ml gluten-free tamari, soy sauce
directions
- Preheat oven to 350°F.
- Mix together all of the ingredients for the meatloaf.
- Spoon meatloaf mixture into standard size muffin tins.
- Or shape loaf into a loaf pan.
- Cook muffin size meatloaf minis for 45 minutes.
- For loaf pan size meatloaf cook 60 minutes or until cooked through.
- Mix all ingredients for sauce together in a small sauce pan over medium heat until sugar has melted and everything has combined.
- Spoon sauce over meatloaf once fully cooked.
