  • Preheat oven to 400ºF. Coat an 10-inch spring form pan with cooking spray.
  • Beat eggs and 3/4 cup of sugar in a large bowl until light and fluffy. Stir in milk, melted butter and vanilla extract.
  • Combine flour and cornstarch and fold into the cake batter. Pour into prepared pan.
  • Layer apple slices in a circular pattern on top of cake. Combine cinnamon and sugar and sprinkle over apples. Bake for about 28 to 32 minutes or until a toothpick comes out clean when inserted.

  1. This was good. It's more like a coffee cake than a birthday cake. I used only 2 eggs, low fat margarine and 1/2 cup of sugar. I also used macintosh apples and it still turned out great. It's a good treat for low fat. Next time I'll put 2 layers of apples on top and more sugar and cinnamon. Mine did burn a bit on the bottom but I think it's because I have a gas stove and I think it gets hotter than it says. Thanks for this recipe. I will make this again.

I replaced flour and sugar with soft ww pastry flour and unrefined molasses sugar and used 1/4 t baking powder, 1/2 t baking soda, 3/4 t salt, and replaced the milk with buttermilk to work with the soda for leavening (that was the last of my baking powder). Very good for breakfast; it has a sponge cake - like taste with 3 large eggs, though I beat them not much at all. I baked it in a heavy 9 inch round pan, and it was higher than the one pictured. Thank you!
