Welsh Rarebit

• Serves: 4

ingredients

• 1⁄2 lb mature welsh cheddar cheese, grated (Colliers)
• 2 tablespoons butter, melted
• 1 tablespoon Worcestershire sauce
• 1 tablespoon mustard
• 1 tablespoon flour
• fresh ground black pepper
• 4 tablespoons beer
• 1 tablespoon laverbread (or substitute Nori sushi sheets, cut up and soaked to a paste)
• 4 thick slices bread

directions

1. Melt butter, cheese, Worcestershire sauce, mustard, flour, and pepper on medium low.
2. Add beer to a good consistency. Remove from heat and let cool when it is a thick paste consistency.
3. Toast bread on one side. Spread seaweed mix on untoasted side, then spread cheese mixture. Broil to brown the top.
