- 3 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1⁄2 lb turkey Italian sausage, fresh boneless chicken or 1/2 lb shrimp
- 3 cups chicken broth
- 12 ounces broccoli florets
- 8 ounces diced tomatoes
- 1⁄2 cup fresh sliced mushrooms
- 1 1⁄2 cups milk
- 12 ounces uncooked fettuccine
- 1⁄2 teaspoon kosher salt & freshly ground black pepper, to taste
- 1⁄2 cup freshly grated parmesan cheese
- 3 tablespoons chopped fresh parsley leaves
directions
- Brown Italian sausage, chicken or shrimp and set aside.
- Melt butter in a large skillet over medium high heat. Add garlic, mushrooms and cook, stirring frequently, until fragrant, about 1-2 minutes.
- Stir in chicken broth, milk, diced tomatoes and fettuccine; season with salt and pepper, to taste.
- Bring to a boil; reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 15 minutes add in broccoli and simmer 5 minutes more. Stir in Parmesan. If the mixture is too thick, add more milk as needed until desired consistency is reached.
- Add in cooked Italian sausage, chicken or shrimp and mix in well.
- Serve immediately, garnished with parsley, if desired.
