Quick and Easy Kielbasa Stew

- 1 lb kielbasa
- 8 -10 large potatoes
- 3 (14 1/2 ounce) cans green beans
- salt
directions
- Slice kielbasa into 1/4" slices (For mine, I half the kielbasa first, because I have young children I also use the skinless variety for the same reason).
- Peel potatoes and cut into 1" cubes.
- Mix all ingredients in a large pot with just enough water to cover, bring to a boil.
- Reduce heat, simmer for 45 minutes to an hour.
- The longer this recipe simmers, the better it is Allowing it to cook longer does let the potatoes start to fall apart, but it just gives the"stew" a nice texture It honestly is just that easy, my kids are very picky and they eat it up It's even better the next day.

This is so easy and tasty! I made it with Bocca smoked "sausage." The recipe didn't say whether to drain the beans or not, so I didn't, so I hardly needed any cooking water. Since I wasn't using real meat, I added a couple of tablespoons of margarine to add lend a little substance to it. When it was done it didn't have that much of a stew texture, so I took out my potato masher and smushed it up just enough to thicken it, leaving most of it in the original sized pieces. The result: a tender, flavorful pot of stew that the whole family loved. Great recipe, even with the substitution. I'll make it again for sure.

A friend of my sister's made this recipe when he catered her wedding. It is delicious! I have been searching everywhere for it to serve at my youngest daughter's grad bash.
