Pumpkin Cookies

"I am not much one for pumpkin, but this recipe is delicious, and so easy, especially with a KitchenAid! Just dump it all in, let the Kitchen Aid do its thing, and then bake the cookies."

ingredients

• 1 1⁄2 cups butter, softened
• 2 cups brown sugar, packed
• 1 cup sugar
• 1 (15 ounce) can pumpkin
• 1 egg
• 1 teaspoon vanilla extract
• 4 cups flour
• 2 cups quick-cooking oatmeal
• 2 teaspoons baking soda
• 2 teaspoons cinnamon
• 1 teaspoon salt

directions

1. In large misxing bowl, cream butter and sugars.
2. Beat in remaining ingredients gradually.
3. Crop by tablespoons onto ungreased baking sheets.
4. Bake at 350 degrees F for 10-12 minutes or until lightly browned.

These are sooooo delicious. i'm having a hard time not eating them out of the oven! I didn't change one thing to the recipe (a first, as I usually have to change something lol)

Really good flavor, but a little gummy textured inside. They are more pumpkin-y than oatmeal-y. I added raisins to the second half before baking, and really liked them better that way. I like the fact that the recipe makes so many cookies, so that I can freeze some for another day!
