- 5 garlic cloves, chopped
- 1⁄2 cup red wine vinegar
- 2 tablespoons olive oil
- 1⁄2 teaspoon oregano (preferably Mexican Oregano)
- 2 tablespoons fresh parsley
directions
- Place all ingredients in the bowl of a food processor and blend until all of the garlic is well combined.

Made this in conjunction with Recipe #315833. This marinade smelled so lovely and fresh when I mixed it up. I did use the Mexican oregano, since I found it at the farmer's market. I liked the combination of the parsley and oregano. My BF thought the oregano taste was overwhelming to his taste buds... but ate all his chicken none the less! I think I may try marinating chicken quarters and then grilling one day. Thanks for posting!!!
