Prosciutto Shrimp

- 12 large shrimp, cooked and cleaned
- 2 tablespoons lime juice
- 1⁄2 honeydew melon, cut in 12 wedges (if you prefer you can use quartered fresh figs instead)
- 12 slices prosciutto, small- medium
- 1 cup mango salsa, see other recipe (Simple Mango Salsa)
directions
- Toss the shrimp with the lime juice, and let sit for 5 minutes.
- Pair each shrimp with a slice of honeydew melon (or fig). Wrap prosciutto around the fruit and the shrimp.
- Spoon Mango salsa over top and serve.
