Pork and Beans Bread

- 1 cup raisins
- 1 cup boiling water
- 1 cup sugar
- 3 eggs, beaten
- 1 cup vegetable oil
- 1 teaspoon vanilla
- 1 (15 ounce) can pork and beans
- 3 cups flour
- 1 teaspoon cinnamon
- 1⁄2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup walnuts, chopped
directions
- Preheat oven to 325 degrees.
- Add raisins to boiling water and set aside to plump.
- Mash beans in a food processor or blender to a very smooth consistency. (take out pork piece before)
- Transfer beans to a medium mixing bowl.
- Add sugar, eggs, oil and vanilla. Mix well.
- Sift together dry ingredients - flour, cinnamon, baking powder and soda - fold into wet ingredients.
- Drain raisins and fold them and walnuts into batter.
- Spoon batter into greased and floured loaf pans (2-3 pans depending on size).
- Bake for 50-60 minutes or until knife inserted in the center comes out clean.
- Delicious served with cream cheese, butter or honey - Enjoy!

YES...OH MY... YES.....Just made 2 loaves....I used 1 cup of sugar like you said....PERFECT...Thank You....Was out of raisins so I used chopped dates from my freezer....soaked them the same....1 loaf half eaten already, and the other one is going to college with my son....Thank you again for a new and unique recipe....(HINT about 1 cup sugar is appreciated beyond words).......YAY....A GOOD ONE!!!!!

So glad to have stumbled across this recipe! The ingredients intrigued me. Just like some cakes with sour kraut or tomato soup. Al I can say is...Wonderful!! We love this toasted for breakfast and I don't feel bad about eating this treat. It is low in sugar, low in fat and rich in fiber. What more can we ask for. I made 2 loves in regular sized bread pans, and baked for 65 min. Thanks for sharing. Koechin
