ingredients
- 3⁄4 cup pineapple juice
- 1⁄2 cup gin
- 2 tablespoons fresh lemon juice
- 2 teaspoons creme de cassis
- ice
directions
- In a pitcher mix pineapple juice, gin and lemon juice. Divide between two highball glasses. Pour 1 tsp creme de cassis into center of each glass, do not stir. Carefully fill glasses with ice and serve immediately.

Outstanding cocktail, Mami J. It has such a wonderful flavor that I really don't even know how to describe. It's quite delicious and isn't too sweet nor too tart nor too fruity. It has a well balanced flavor base, but the Creme de Cassis really adds a lovely touch to the drink. Made for Culinary Quest 2016 (the Azores Islands). I'm so glad I tried this cocktail !!

I needed something refreshing and this seemed like it would fit the bill...and it did! Did make some subs, though. Had loads of lemons I picked up at the Market today and I'd made fresh lemonade, so I used that instead of the pineapple juice. Loved the tart/sweet thing happening with the gin (love gin!) and the smoothness of the creme de cassis. Loads of ice. Yummy.

I began cooking as a kid with my mom. I cook mostly Mexican food, but my best recipes are the ones that I improvise at the last minute! Especially desserts, which I love to cook, but always forget to write down.
