- 1 (16 ounce) jar dry roasted peanuts
- 3 tablespoons margarine
- 1 bag peanut butter chips
- 1 can sweetened condensed milk
- 2 cups miniature marshmallows
directions
- Grease 9x13 pan.
- Pour 1/2 peanuts on bottom of pan.
- Melt margarine and chips.
- Add milk and then marshmallows (do not melt marshmallows).
- Pour over peanuts, pat down.
- Put rest of peanuts in and pat down.
- Chill.

These bars tasted very good. However, I had a terrible time with them sticking to everything! First, I had them in the fridge overnight and they wouldn't come out of the pan or stay together and stuck to the serving platter (the entire bottom of the bar was stuck to the platter), what a mess! I put the leftovers in the freezer, this did help with the stickiness some but then they didn't taste as good. Moreover, all of my marshmallows conglomerated in one place, leaving some pieces without any marshmallows at all. I followed the recipe as directed and didn't substitute anything. *Update, I've made these a couple more times and found that if you completely cover the bottom of the pan with the peanuts (takes more than 1/2 jar) than stickiness is not such an issue and I keep them in the freezer. I also let the mixture cool just a few minutes before adding the marshmallows so they don't stick together and then just barely stir them in before dumping them over the peanuts.

These were sooo yummy and addicting! I brought them to work and everyone kept going back for more! I ended up hiding some so i would have some left over for me! i took another reviewers advice and kept them in the freezer after refrigerating them over night because when they sat out they became sticky. if you are going to put them on a platter, i would spray it with pam first to keep it from sticking. A co-worker suggested dipping the bottoms in chocolate, which would help. Thanks so much, this was so easy and great!

I made these the other day and they came out great. I made a few adjustments based on reviews and an ingredient I forgot to buy. Fortunately, they came out perfect. I used butter as I never have margarine in the house. I used 2 10oz pkgs of peanut butter chips and lastly i fogot to buy the mini marshmallows so I substituted with 1 cup of marshmallow fluff (which may be unique to New England). I sprayed the pan and a spatula with cooking spray before putting the ingredients in the pan then used wax paper to press into pan. I refrigerated for about an hour. I cut them into bars and they did not require further refridgeration. Everyone loved them.

I made these today... since the shopping list I printed from the website only indicated "a bag" of peanut butter chips, the one I bought was too small, therefore, I added 2/3 cup of semi sweet chocolate chips. Hubby (who loves Payday Bars) said they weren't too far off from the real thing. Success! I cut up the rest of the pan of bars and individually bagged them for a quick grab out of the freezer. Yum! P.S. Next time I will try melting the marshmallow.

***Update: I made these again and used fat free Eagle Brand milk as that's what I had. Mistake! They didn't set up as the first batch did. Woe is me ... I couldn't take them to the potluck so I had to eat it myself with a spoon ;-) ****Luckily I made these on a "points don't matter" day. We scarfed them down in no time. I tweaked to accomodate what I had on hand - honey roasted peanuts & butterscotch chips. So I subbed peanut butter for the margarine to get the Payday taste. They were melt in my mouth wonderful! Thanks!

I was looking for something a little different to take to a picnic and happened onto this recipe. If I didn't know any better, I would SWEAR I was eating a Payday, except this is a little softer (as Anita said) and tastes much fresher. I substituted butter for the margarine, and buttered my offset spatula to get the mixture evenly spread. I'm thinking about trying this next time with honey roasted peanuts. Thanks for sharing this recipe!
