- 3 tablespoons bacon fat
- 5 idaho potatoes, thinly sliced
- 3 slices bacon, diced
- 1 onion, chopped
- salt and pepper
- chopped fresh parsley
directions
- Heat bacon fat in cast iron skillet. Add potatoes, bacon, and onion; cook covered over medium heat for 15 to 20 minutes. Shake the pan while the potatoes are cooking so bacon and onion do not burn and turn the potatoes from time to time.
- Remove cover and cook until golden brown and crunchy, 10 to 12 minutes.
- sprinkle with salt, pepper, and parsley.

I always like to try out new recipes, so decided to see how others prepared their fried taters. This is the way I make them, excluding the bacon. I live in southwest Missouri, which isn't that far south, but I also save my bacon grease (drippings) in a covered bowl and store in the refrigerator to use later on for frying potatoes, making wilted lettuce, and to add to green beans, spinach, greens, etc...I'm sure that it's not considered healthy cooking, but the smoke flavor of bacon is so yummy!
