My Easy Turnip Greens

"Guesstimate at measurements and times. Served with flounder sauteed in cornmeal/salt crust with homemade fries. YUM Other recipes call for bacon or salt pork. I usually have pastrami frozen for quick sandwiches, making this variation easier for me and less fat. of all my veggies planted, my turnips thrived. this makes good use of the greens."

  • 4 cups turnip greens, chopped
  • 2 ounces pastrami, carl budding
  • 13 - 12 cup walla walla onion, chopped
  • 1 tablespoon white vinegar
  • salt and pepper
  • Pam cooking spray

directions

  • Chop greens, onion, pastrami.
  • Heat pan to medium ish low.
  • Spray with Pam.
  • Saute til greens are wilted and onions turning translucent.
  • Add vinegar, salt and pepper to taste, vinegar first.

I'm a food junky. I also work very hard to eat a healthy varied diet. Almost every weekend i'll spend several hours experimenting to make a delicious nutritious new handful of recipes. When i'm not cooking i'm looking for the next hiking/camping/ backpacking/kayaking trip to take. I swear I'm solar powered. I have a beautiful dog who accompanies me on nearly all trips. I also have a wonderful husband whome holds down the fort until my return. My poor hubby does not have a healthy food palate. He provides me plenty of challenge trying to find healthier (but not obviously) savory foods.
