  • Roast sweet potatoes at 350 until tender (about an hour).
  • Halve potatoes lengthwise and remove the soft insides. Save the skins and try to keep them intact.
  • Mash together the potato, butter, lime, garlic powder, salt and pepper.
  • Re-fill skins with mixture and bake another 10 minutes.
  • Serve with heated black beans.

  1. Excellent way to prepare sweet potatoes. The lime juice gives the flavor a "pop". I never would have thought to use it. I like my potatoes a bit sweeter, so I added 1 tablespoon of brown sugar.Also, it is easier to cut the potatoes in half lengthwise before baking. Salt and place cut side down on a parchment lined baking pan. Bake for 30 to 40 minutes or until tender.
