Killer Pasta Salad

"Oil/vinegar based pasta salad, of my own creation. Good stuff. The carrots add a bit of sweetness, the sunflower seeds a nice crunch and nutiness, the garlic and herb seasoning ( I think it was Good Seasons brand) add a different kind of flavor, and the pasta a nice array of shapes and colors.I use one box of wacky shaped pasta like cellantani, and one box of Tri-colored rotini. This makes an enormous amount of pasta salad, so you might want to half the recipe. We live on this stuff in the summer."

directions

  • Mix dry seasonings according to the directions on packet, adding the appropriate amount of vinegar, oil and water.
  • cook pasta. Rinse with cold water, drain.
  • Mix all ingredients together( except for the sunflower seeds), cover and refrigerate.
  • This has to sit overnight for the flavors to meld.
  • add salt and pepper to taste.
  • mix in the sunflower seeds right before serving.

  1. This is quite similar to my Mother's pasta salad recipe except for the sunflower seeds. They add a nice crunch. Since I knew this salad would take days to eat I added the to each individual serving. We love to make this and dress it up sometimes with cubed cheese and pepperoni that we have cooked in the microwave between sheets of paper towel. Made for PAC, Yum.
     
  2. Made this recipe as given & then divided it into thirds, eating the 1st one as given! Another day I added some diced chicken breast to the 2nd portion & the 3rd portion was mixed with some baked & flaked salmon! A great way to work ourselves through this GREAT TASTING PASTA SALAD! I am a mother of two precious children and I'm very happily married to a man who loves my cooking! ( it helps). I consider my cooking style ,Southern/Ethnic". My mom is a tried and true southerner, my dad an Armenian man who loves to try different things. I really love to eat, read, dance ( I bellydance as a hobby),and learn. My favorite cookbook is this really strange one I got from a yardsale years ago. It is kind of a healthy cookbook geared for kids, so the foods are simple and non-fussy. I have probably made everything in the book!
