Kidney Bean Salad

ingredients
- 2 (16 ounce) cans red kidney beans, drained and rinsed
- 1⁄2 cup sweet pickle relish
- 1⁄2 cup mayonnaise
- 1 tablespoon sugar
- 2 tablespoons dry mustard (Colman's Original English Mustard Powder is my favorite)
- 1 teaspoon salt
- 1⁄2 cup finely minced onion
- 1⁄2 teaspoon white pepper
- 3 garlic cloves, minced
- 2 tablespoons chopped fresh parsley (optional)
directions
- Combine all the ingredients in a serving bowl. It is best made a day ahead. Store in the refrigerator.
- Serve with firm crackers (my favorite are Triscuits).

Yet another recipe that I cut in half & prepared as a trial run to see if it was worth making in the future as part of a finger food buffet for one of the monthly groups I host ~ This great 'salad' will definitely have a place on the buffet! <p>I recently celebrated my 19th anniversary living in SW Florida. I moved here from Massachusetts, just north of Boston.
