Japanese Ginger Salad Dressing

ingredients
- 1 cup olive oil
- 1⁄4 cup soy sauce
- 1 lemon, juiced
- 3 garlic cloves, minced
- 3 tablespoons fresh gingerroot, peeled and minced
- 1 teaspoon Dijon mustard
- 2 tablespoons honey
- ground black pepper
- 2 tablespoons rice wine vinegar
directions
- In small bowl whisk together all ingredients EXCEPT olive oil.
- Once thoroughly combines, add oil in a steady dtream whisking constantly.
- When all the oil is incorporated pour into serving container and chill until served.

I won't star rate this because as stated by another reviewer this salad dressing has entirely too much olive oil. If you use this much the olive oil's strong flavor will completely overpower the other flavors. I reduced the oil-to-soy sauce ratio to about 50/50. This tasted delicious on an Asian-themed salad and I also tried a few tablespoons in ground pork to make Asian fusion tacos. The Dijon with soy sauce was a delicious flavor combination.
