- 1 lb lean ground beef
- 1 medium onion, diced
- 2 tablespoons hot taco seasoning (a package)
- 10 ounces ro-tel fire roasted diced tomates and green chilies
- 32 ounces Velveeta cheese, cut into cubes (one box)
- tortilla chips, for serving
- vegetables, for serving
directions
- Turn instant pot on saute and wait until hot.
- Add the ground beef, onion, seasonings, green chilies, and tomatoes. Cook while crumbling the beef, until no longer pink.
- Add the Velveeta to pot. Do not stir. Place lid on and turn vent to sealing position.
- Cook on manual high pressure for 4 minutes.
- When timer is done, do a quick release. Keep stirring until everything is well combined.
